For the Dough:
- 3 ½ cups (450g) all-purpose flour
- 1 packet (7g) instant yeast
- ¼ cup (50g) sugar
- 1 teaspoon salt
- 1 cup (240ml) warm milk
- ½ cup (115g) unsalted butter (softened)
- 1 egg (for brushing)
For the Cheesy Filling:
- 1 cup (100g) grated Gruyère or Emmental cheese
- ½ cup (50g) shredded mozzarella (for extra stretch)
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
Instructions
- Prepare the Dough: In a bowl, mix warm milk and sugar, then sprinkle yeast on top. Let sit for 5 minutes until foamy.
- Mix Dry Ingredients: In a large bowl, combine flour and salt. Gradually add the yeast mixture, then mix in the softened butter. Knead for 10 minutes until smooth.
- Let It Rise: Cover the dough with a cloth and let it rise for 1–2 hours until doubled in size.
- Shape the Gipfeli: Roll out the dough into a large rectangle (¼ inch thick) and cut into triangles.
- Fill & Roll: Mix cheeses with black pepper and nutmeg. Place cheese at the base of each triangle, then roll into a crescent shape.
- Second Rise: Place the rolled Gipfeli on a baking sheet lined with parchment paper and let them rest for 30 minutes.
- Bake: Preheat oven to 375°F (190°C). Brush Gipfeli with beaten egg and bake for 18–20 minutes until golden brown.
- Cool & Serve: Let them cool for a few minutes before serving. Enjoy warm!
Notes
- For extra crispiness, bake at 375°F (190°C) with a fan setting if available.
- Freeze unbaked Gipfeli for later—bake directly from frozen, adding 2–3 minutes to the baking time.
- Experiment with fillings like feta, cheddar, or even a sweet version with chocolate!
