For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
For the Honey Mustard Sauce:
- ¼ cup honey
- 3 tablespoons Dijon mustard (or whole grain mustard)
- 1 tablespoon yellow mustard
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar (or lemon juice)
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme
- ¼ teaspoon red pepper flakes (optional for heat)
Instructions
- Prepare the Chicken – Pat the chicken dry with paper towels. Season both sides with salt, black pepper, and garlic powder.
- Make the Sauce – In a bowl, whisk together honey, Dijon mustard, yellow mustard, garlic, apple cider vinegar, paprika, thyme, and red pepper flakes until smooth.
- Sear the Chicken (Optional for Extra Flavor) – Heat olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden brown.
- Cook the Chicken – Choose one of the following methods:
- Baking: Preheat oven to 375°F (190°C). Place the chicken in a greased baking dish, pour the honey mustard sauce over it, cover with foil, and bake for 20–25 minutes. Uncover and bake for an additional 5–10 minutes until the sauce thickens.
- Stovetop: Lower the heat, add the sauce to the skillet, cover, and let it simmer for 15–20 minutes, flipping occasionally.
- Grilling: Grill the chicken over medium heat for 5–7 minutes per side, brushing with the sauce frequently.
- Serve & Enjoy – Let the chicken rest for 5 minutes before serving. Drizzle extra sauce on top and pair it with roasted vegetables, mashed potatoes, or rice.
Notes
- For a crispy version: Dredge the chicken in flour, egg, and panko breadcrumbs before frying.
- For a slow cooker version: Add all ingredients to a slow cooker and cook on low for 4–6 hours.
- For extra creaminess: Stir in a tablespoon of Greek yogurt or heavy cream into the sauce before serving.
- Storage: Store leftovers in an airtight container for up to 4 days in the fridge or 3 months in the freezer.
