- 1 cup (120g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ teaspoon baking powder
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract

- ¼ cup (60ml) heavy cream

Instructions
1. Prepare the Batter
- In a mixing bowl, whisk eggs, sugar, and vanilla extract until light and fluffy.
- Sift in flour, baking powder, and salt, then fold gently to combine.
- Add lemon zest if using for extra freshness.
2. Incorporate Butter & Cream
- Slowly pour in the melted butter while folding the batter gently.
- Add the heavy cream and stir until just combined.
3. Chill the Batter
- Cover the batter and refrigerate for at least 1 hour (or overnight) to help create the signature Madeleine hump.
4. Bake the Madeleines
- Preheat oven to 375°F (190°C). Grease and lightly flour a Madeleine pan.
- Spoon batter into each mold, filling about three-quarters full.
- Bake for 8-10 minutes or until the edges turn golden brown and centers puff up.
- Remove from the oven and let them cool on a wire rack.
5. Serve & Enjoy
- Dust with powdered sugar, drizzle with chocolate or caramel, or pair with a hot cup of coffee or tea.

- Chilling the batter is key – It helps achieve the classic bump on the Madeleines.
- Avoid overmixing – This keeps the batter light and airy.
