Ingredients
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
1 (3.4 oz) box instant vanilla pudding mix
½ teaspoon raspberry extract
¼ teaspoon lemon extract
¼ teaspoon almond extract
1 teaspoon vanilla extract
Blue gel food coloring (adjust to preference)
Instructions
In a mixing bowl, whisk together the whole milk, sugar, and pudding mix until smooth and slightly thickened.
Add raspberry, lemon, almond, and vanilla extracts. Stir well to combine.
Pour in the heavy cream and mix until fully blended.
Add blue gel food coloring a little at a time until you reach your desired shade of blue.
Cover and refrigerate the mixture for at least 2 hours.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (typically 20–25 minutes).
Transfer the churned ice cream to a freezer-safe container and freeze for 3–4 hours or until firm.

Notes
For best color, use gel food coloring instead of liquid.
Taste the base before churning and adjust extract levels if needed.
You can fold in chocolate chips, cereal, or crushed cookies before freezing for added texture.
