Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix peanut butter, sugar, egg, and vanilla extract (if using) until well combined.
- Form the dough into 1-inch balls and place them on the prepared baking sheet, leaving about 2 inches between each cookie.
- Flatten the cookies with a fork to create a crisscross pattern.
- Bake for 10–12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use brown sugar for a chewier texture.
- Add chocolate chips, crushed peanuts, or oats for extra flavor.
- These cookies can be stored in an airtight container at room temperature for up to 7 days.
